I'm always on the hunt for meal inspiration, so I thought it would only be fair to share a few of our favorite meals.
Here's the thing, we believe in healthy eating, local ingredients and easy "methods." We don't believe in recipes, don't count calories, we just believe in making good tasting, good-for-you food.
That being said, here are a few of our go-to's:
1. Summer Salad
- The base is always the same - mixed greens (extra spinach), shredded carrots, shelled edamame, golden raisins, salt & pepper, oil (olive) & vinegar (balsamic). Then I add whatever leftovers we have on hand. Typically chopped chicken breast or turkey deli meat, black beans, cold farro and avocado.
2. Breakfast Go-To
- Rye toast, a smidge of butter, mashed avocado & an egg fried in coconut oil. So easy. So good. We eat this for breakfast, lunch and sometimes even dinner.
3. Overnight Oats
- Again, an easy method here. Mix 1/3 cup rolled oats, 1/3 cup milk (we use almond) and 1/3 cup yogurt (we use greek) in an airtight container and place in fridge overnight. In the morning, add the goods. I add banana, honey, chopped almonds, a dash of salt and cinnamon.
4. Guac (Simplified)
- Lets be honest, you don't need hot sauce or mystery powders if you do it right. Our preferred equation consists of the following: 4 avocados, 1 diced jalapeƱo, 1 minced garlic clove, 1 diced tomato (sans seeds & juice), 1 diced shallot, juice of a large lime, salt & pepper.
